Ingredients

3 racks of pork ribs

Canola oil

Rib rub, your choice

Jalapeno Chipotle Wine

Tiger Sauce

I Can’t Believe It’s Not Butter

BBQ sauce, optional

Instructions

Set grill temp to 225°.

Rub ribs with oil, then generously cover both sides with rib rub. (Do not actually rub into the meat, it can cause tearing.)

Place racks directly on grill meat side up. Smoke on 225° for 3 hours. Generously spray ribs every 30 minutes with Jalapeno Chipotle Wine.

After 3 hours, remove racks from grill, leaving grill running at 225°.

On large piece of heavy duty foil, pour ¼ cup Tiger Sauce and top with three large slabs of I Can’t Believe It’s Not Butter. Lay racks meat side down. Drizzle with another ¼ cup of Tiger Sauce and 3 more slabs of I Can’t Believe It’s Not Butter. Begin to fold up, but before sealed, add ¼ cup of Jalapeno Chipotle Wine, then seal tightly. Repeat for each rack. Place ribs back on 225° grill, foiled with meat side down, for 2 hours.

Remove after 2 hours, leaving grill running at 225°. Carefully unwrap ribs.

Place racks back on 225° grill for 1 hour to tighten up. Remove from grill, cover tightly, and let rest for 20 minutes. Serve with BBQ sauce if desired, but not needed.
