- 4 chicken breast - butterflyed
- approximately 2 cups Jalapeno Wine Lemonade
- 8 strips thick cut bacon
- 1½ cups mozzarella cheese - shredded
- salt and pepper to taste
- Marinade chicken in lemonade for a minimum 4 hours in sealed zip-lock bag. Stuff with mozzarella cheese and wrap with bacon, securing with toothpicks. Grill at 350 to internal temp of just over 160. remove to heat resistant dish, we use a pyrex pie plate and cover with tin foil and let rest for 8-10 minutes.
